Carrot halwa or gajor halwa is a very popular dessert made with carrot. It is a very simple and delicious dessert can be done in few minutes. I used the regular carrot that are available in our local market. Egg, milk and ghee give the richness to the halwa. Cardamon spices also gives a nice aroma and flavor.

Ingredients
- Carrot - 4 cups grated
- Egg - 4
- Sugar - 2 cups
- Powder milk - 1/2 cup
- Cardamon powder - a pinch
- Ghee/butter - 1/4 cup
- Pistachio for garnising - 2 tablespoon chopped
Instructions
- Boil the grated carrot with 4 tablespoon water on a medium high heat.
- Cover it and boil until all water dries up.Let them cool.
- Now mix boiled carrot with lightly beaten egg,sugar,powder milk and cardamon powder.
- Heat ghee in a nonstick pan and pour the mixture into it.Stir it regularly till the mixture forms a thick consistency.
- When the mixture gets thick like a halwa, and starts to leave the corners of the pan, stop cooking and keep aside.
- Transfer the halwa in a serving dish and garnish it with some chopped pistachio.
- Let the mixture get cool and within 2 hours the halwa will get cold and be ready to eat.
