Carrot cake never goes out of style. It is a rich and moist spice cake, full of grated carrot, raisins and cinnamon powder. The grated carrot give the cake color and texture, along with sweetness and moisture.
Carrot Cup Cake

Ingredients
- For 10 cupcakes
- All purpose flour - 1 cup
- Egg - 2 numbers
- Butter - 1/2 cup/100 gm
- Milk - 1/2 cup
- Castor sugar - 1 cup
- Vanilla Essence - 1/2 teaspoon
- Baking powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Carrot - 1 cup grated
- Raisins - 2 tablespoon
Instructions
Preparation:
- Preheat your oven to 160 degree C.
- Place cupcake paper in cupcake tray and keep aside.
Method:
- Mix dry ingredients - flour, baking powder, cinnamon powder and salt in a bowl.
- Beat butter until light and fluffy. add sugar and beat until all sugar is dissolve. then add egg one by one and beat.add vanilla essence.
- now mix flour mixture and milk.
- Then add grated carrot and raisins.
- Place the batter into cupcake mold and bake for 20-30 minutes or until toothpick comes out clean.
- Remove from oven and cool for 15 minutes. Then remove from cake pan and let them cool. Decorate as desire.
