Begun Bhorta or Mashed eggplant is a delicious favorite Bhorta in all over Bangladesh and India.It is popular for it’s smoky burnt flavor.
Begun Bhorta/Spicy Begun Bhorta/Spicy Mashed Eggplant/Brinjal Bhorta
Ingredients
- Brinjal/eggplant/Begun - 300 gm
- Onion - 1/4 cup chopped
- Garlic - 1 tablespoon chopped
- Ginger paste - 1/2 teaspoon
- Green Chilies - 3-4
- Red Chili Powder - 1/2 teaspoon
- Turmeric powder (optional) - 1/2 teaspoon
- Roasted cumin powder - 1/2 teaspoon
- Garam masala powder - 1/2 teaspoon
- Tomatoes - 1/2 cup chopped
- Fresh Coriader leaves - 1/4 cup chopped
- Pickle's oil (any pickle) - 4 tablespoon
Instructions
Clean and rinse the eggplant.Cut the middle point with a knife.Rub it in a bit of oil.Turn the gas stove to medium and place the eggplant in the fire.Keep turning it over every 10 minutes.Turn off the heat once the eggplant is soft and tender.Remove from gas and peel off the charred skin

Heat pickle's oil in a pan and saute' onion,garlic,green chilies and ginger.Then add mashed eggplant, tomatoes, coriander leaves,turmeric powder,garam masla, red chili powder and salt.Mix them well on a medium high heat for 3-4 minutes.
Continue mashing until thoroughly mixed. Once completely mixed ,then remove from heat and serve with rice.
