  1. At first, cut the mutton into small, regular pieces.
  2. Clean and rinse.
  3. Marinate the mutton with ginger, garlic, coriander, salt and yogurt.
  4. Set aside for 20 to 25 minutes.



  1. Heat oil and ghee together in a pan.
  2. Fry the onions, cinnamon, cardamom, cloves and bay leaves.
  3. As the onions start to turn brown, stir in the marinated mutton.
  4. Mix thoroughly for 7 to 8 minutes over medium heat.
  5. Cover and cook over low heat.
  6. Stir the mutton some more after about 20 minutes.
  7. Pour in 2 cups of water.
  8. Cover the pan again and let it simmer over low heat.
  9. Keep cooking until the meat is soft and tender.
  10. If necessary, add more water.
  11. Garnish with fried onions.
  12. Mix in the lime juice, sugar and kewra.
  13. As the gravy starts to thicken, add the green chili.
  14. Turn off the heat and keep the pan covered.
  15. Serve hot.
