Preparation:

  1. Remove skin, clean and rinse the chicken pieces.
  2. Marinate the chicken with the ginger, garlic, yogurt and salt.

 

Method:

  1. Heat oil and ghee in a pan.
  2. Fry the chopped onions, bay leaf, cardamom, and cinnamon for about a minute.
  3. Mix onion paste, cumin powder, coriander powder, white pepper, raisin paste, peanut, cashews paste and salt. Saute for two minutes on medium high heat.
  4. Add in the chicken pieces and stir for about 5-6 minutes over medium heat.
  5. Once the water starts to dry up, add the milk.
  6. Pour in half cup of water and mix well.
  7. Cover the pan and keep over low heat.
  8. After about 10-12 minutes, remove the cover and add in the kewra essence.
  9. Stir some more and cover.
  10. Once the gravy thickens, and the chicken is cooked, mix in the sugar.
  11. Turn off the heat and keep the pan covered for another 5 minutes to let flavor blend in.
  12. Serve hot.
