How to Preserve Green Peas/How to Frozen Green Peas

Ingredients
- Fresh peas - as needed
- Sauce pan/pot - 1
- Water - as needed
- Ice - as needed
- Ziplock bags - as needed
Instructions
Method:
- Shell the peas, discard the spoiled ones. It is better to shell the peas on the same day, you buy fresh peas from the market.
- Wash the shelled peas well and drain the water completely.
- Bring plenty of water to boil in a big vessel/pot. When water boils vigorously, add the peas. There should be enough space for the peas to move, so do not over crowd the pot. If over crowded, some may get overcooked and some may be under cooked.
- Blanch the peas for 1 1/2 minute. By this time, the peas will also float on the surface as seen in the picture below.
- At this stage, drain the water and put the peas immediately in ice cold water to prevent further cooking.

Let it remain in cold water for 1-2 minutes, then drain the water again, pat it dry and spread it on a cloth to air dry.

Then you can pack it in a ziplock bag or any air tight container and store it in the freezer.

How to thaw frozen peas-Take needed quantity of peas, wash it and use it. As it is already pre-cooked, it gets cooked faster. Alternatively, you can also bring it to room temperature and use it.

Tips - You can divide and store the peas in small individual zip-lock bags as seen in the picture below. In this way, you do not have to take the whole lot from the freezer every time you require peas for cooking.

Shelf Life - If stored properly, it will last for months.
