Aam Doi-Mango Sweet Yogurt
Aam Doi-Mango Sweet Yogurt

Ingredients
- Fresh Sweet Ripe Mango - 1 large
- Tok doi(plain yogurt)/Curd - 500 gm
- Ful Cream Milk - 4 cups
- Condensed milk - 1/2 can
- For Garnishing:
- Pistachio - 1 tablespoon
- Mango - chopped as needed
- Zafran/Saffron - a few stand
Instructions
Preparation:
- Pour the yogurt into a soft cotton cloth, tie the cloth loosely and hang the yogurt along with the cloth for 40-50 minutes or til most of the water has been drained. You can skip this stage by using Greek yogurt.
- Boil milk in a large heavy bottomed pan.. Once it comes to a boil, reduce heat to low and allow to simmer. Keep stirring occasionally. Continue to do this till the milk is reduced to one cup. Let the milk to cool.
- Preheat the oven to 140 degree C and place the rack on the top.
Method:
- Take the yogurt out from the cloth. In a blender put the yogurt, milk, sweetened condensed milk and the mango. Mix well. Adjust sugar at this time. If you need add more condensed milk for sweetness.
- Pour the mixture into a oven proof dish or bowl. Then keep it in a large oven safe tray. Fill the tray half way with boiling water. Put the tray into preheated oven.
- Bake the yogurt for 30-40 minutes minutes in a preheated oven.
- Just check it if the top of the yogurt has set with your finger or spoon.
- Let it cool on room temperature then put into refrigerator.
- Garnish with chopped pistachio and a few saffron stands. Serve chilled.
Notes:
- Adjust sugar according to the sweetness of the ripe mango used to make the aam doi.
- The color of the yogurt should be depends on the deep color of the mango.
