Singara or Indian Samusa is a world famous snacks and also popular in our country. It is always available in our country. People very much love it’s taste and crispiness.

Preparation for filling:

  1. Heat two tablespoon oil in a pan, then add cumin and let them splutter.
  2. Then, add onion and fry for a couple of minutes.
  3. Add ginger-garlic paste, chili powder, turmeric powder, garam masala, salt and a little water for preventing burning.
  4. Now add the chopped carrots and fry them a little bit until soft.
  5. Mix potatoes and red chili flakes.
  6. Finally, add the chopped coriander and green chilies.
  7. Adjust salt and pepper.
  8. Mix thoroughly but gently.
  9. Remove from heat and let them cool.

Wrap preparation:

  1. Mix ghee, ajwain and salt into the flour.
  2. Rub together until the flour becomes crumbly, then slowly add the water while kneading. You will not require too much water.
  3. The dough should be slightly hard, not as soft as buns dough is.
  4. Once done, cover and set aside for about 10-15 minutes.
  5. Divide the dough into 8 balls.
  6. Roll each one out to a thin small ruti and divide each ruti in half in the shape of a semi circle.


  1. Take each half and form it into a cone, sealing the ends together using water and pressing with your fingers.
  2. Pour the filling into it, then using a bit of water, press and seal the top opening shut.
  3. Proceed with all the remaining dough, you will end up with 16 singara.
  4. Once all are have done, fry on low heat until very nicely browned and crispy.
  5. Serve with chutneys or sauces.
