Description
A tempting blend of delicious flavor with fire-roasted cashews,warm fried chicken, cucumber, tomato and mixed with sauce, lemon juice and salt.
This is a great salad. It has a slightly sweet,spicy dressing, and is loaded with chicken, cashews and crunchy veggies.
Thai Chicken Cashew Nut Salad

Ingredients
- For fried chicken
- Chicken - 1 cup cut into small cube
- Cornflour - 2 tablespoon
- Egg - 1 piece small
- Soy sauce - 1 tablespoon
- White pepper powder - a pinch
- Salt - to taste
- Oil - for deep fry
- For salad
- Cashew nut - 1/2 cup roasted
- Cucumber - 1/2 cup cut into small cube
- Carrot boiled - 1/4 cup cut into small cube
- Fresh Coriander leaves - 3 tablespoon finely chopped
- Onion - 2 tablespoon finely chopped
- Green chilies - 1 teaspoon finely chopped
- Sweet chili sauce - 2 tablespoon
- Fish sauce - 1 tablespoon
- Lemon juice - 1 tablespoon
- Salt - to taste
Instructions
Preparation:
- Mix in a bowl chicken,cornflour, egg, pepper powder and salt. Mix well.
- Heat oil in deep fry pan and fry chicken cube until golden.
- In another bowl mix all other ingredients with fried chicken cube.
- Serve with thai soup or fried rice.
