Strawberry Yogurt Pound Cake
Ingredients
- Dry Ingredients:
- All purpose Flour - 2 cups
- Baking Soda - 1/4 teaspoon
- Baking Powder - 1/4 teaspoon
- Strawberry Gelatin Powder - 2 tablespoon
- Salt - 1/2 teaspoon
- Sugar - 2 cups
- Wet Ingredients:
- Egg - 3 room temperature
- Tok doi(plain yogurt)/Curd - 1/2 cup thick
- Vanilla Essence - 2 teaspoon
- Lemon Juice - 1 teaspoon
- Strawberry - 1 cup chopped fresh or frozen
- Butter/oil - 1 cup
- For Greasing Pan:
- Butter - 1 tablespoon
- Flour - 1 tablespoon
Instructions
Preparation:
- Preheat your oven to 180 degree C. Grease with butter and flour a 10-in. fluted tube pan.
- Mix dry ingredients - flour, salt, soda, baking powder and gelatin powder. Mix until well mix. Keep aside.
- Toss chopped strawberries with one tablespoon flour and keep aside.
- In a large bowl whisk egg until foamy with electric bitter, add sugar and whisk again.
- Now add oil, yogurt and whisk until light and creamy texture.
- Then add flour mixture and mix with a spatula gently.
- Mix vanilla essence and lemon juice.
- Finally gently fold strawberries with a spatula .
Baking:
- Transfer batter to prepared pan.
- Bake 55-60 minutes or until a toothpick inserted in center comes out clean.
- Cool in pan 10 minutes before removing to wire rack; cool completely.
Topping:
- In a small bowl, mix confectioners' sugar and lemon juice until smooth. Drizzle over cake.
